Ten Ways To Use Eggs
So many eggs from the backyard birds … Here’s what to do with them!
I know not everyone has an abundance of eggs lying around, but I know SOME of you reading this do. I hear people talking about all the extra eggs they have from their backyard birds and I know it can get overwhelming when you have six or seven dozen eggs you don’t know what to do with.
I don’t really like eggs. I mean, I don’t hate them but I definitely need VARIETY when eating them, or I will grow so sick of them. They are an excellent source of protein though so I try to incorporate them frequently. Now I could eat Egg Salad Sandwiches nearly every day and never grow tired of eggs I think and maybe fried over medium. I have to get real creative sometimes though. Need ideas for eggs you cannot/do not sell? Here are ten ways to use eggs you have on hand.
Ways to use the whole egg
Breakfast Casserole – like this Egg’s Benedict Casserole

Frittata – my friend Sara at Field and Flour showed me the way of the frittata and now I can’t stop making them.
Ways to use the egg white only
Angel Food Cake – I can name three people AT LEAST who absolutely LOVE this cake, as in it is their favorite. Suprise someone you love with this light and fluffy delight.
Meringue – spring is coming after all who doesn’t love a lemon meringue pie?
Macarons – I am TERRIBLE at making these. They always deflate 😫 somebody come show me how.
Ways to use the yolk
Lemon Curd – so fun to make, plus you’ll feel like you live at Downton Abbey when you eat it.
Homemade Pasta – FUN family activity. Be prepared to make a mess!

Ways to get rid of extras
Give them to a soup kitchen
Gift them your friends and neighbors
Sell them, OR let your kids sell them. It’s like a farm/rural kids’ version of a lemonade stand.
When spring rolls around you know you’ll need plenty hard-boiled eggs to dye for Easter and such so keep those stocked in your fridge and you’ll have them for an easy snack anytime.
