Taco Soup is a flavorful, easy to make soup. It is a crowd-pleaser.
If you can make Chili then you can make a Taco Soup. I never would have thought to make this, but my sister-in-law used to make it in a crockpot for her kids’ birthday parties and I kind of fell in love with it. I like to eat it with cornbread. Unlike Chili which I tend to make a little spicier, this is not a super spicy dish. It is very flavorful though.
You need a taco seasoning mix and ranch seasoning mix to make this, so talk about a mix of flavors.
It is pretty simple and easy to make. Like I said my sister-in-law used to make it in the slow cooker and the only additional step she had to take was to brown the ground meat and sautee the onions. Now with the invention of the insta-pot/electric pressure cooker, we know that those two things can all happen in one pot.
I brown the grass-fed ground beef in a little olive oil (I do this because our beef is very lean because of their diet) and add the diced onions. I cook the onions until translucent. After that, I add the other spices and continue to stir for about another minute. I make my own seasoning blends instead of buying store-bought, but you can certainly use the store-bought taco seasoning and ranch dressing mix.
Then I just dump all the other ingredients on top of that meat mixture. I let it come to a boil and reduce the heat to medium-low and reduce the liquid by about 1/3 before serving.
This is a tasty soup, not difficult to make, and another way to use that ground beef you bought.
Taco Soup
Ingredients
- 1 lb Grass-Fed Ground Beef
- 1 tbsp olive oil
- 1 cup onion diced
- 1 15 oz can Rotel Tomatoes
- 1 15 oz can Organic Black Beans
- 1 15 oz can Red Kidney Beans
- 2 cups Frozen Corn Kernels
- 2 TBSP Taco Seasoning Mix 1 packet
- 2 TBSP Ranch Seasoning Mix 1 packet
- 2 cups Beef Bone Broth
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Heat oil over medium heat and add ground beef, salt and pepper and stir.
- Cook until the ground beef is browned.
- Add the diced onion and cook until it is translucent.
- Add the taco and ranch seasoning mixes and stir.
- Add remaining ingredients and bring to a boil.
- Reduce heat to medium-low and cook for about 35-40 minutes, or until liquid reduces by 1/3.
