When it comes to seasoning food we love to experiment. Seasoning a steak is no exception. Seasoning a steak you will cook perfectly is so important!
Here is the big secret:
There are NO secrets of seasoning steak. In fact, the simpler you keep it is probably the better.
It can be fun though, to try different spices to create different flavor profiles that will make your steak so yummy. There are a few things to keep in mind though.
First Things First
Choose the Right Cut:
Start with a quality cut of beef, of course we love our grass-fed steaks, Sirloin, NY Strip, Ribeye and Filet.
Pat Dry and Bring to Room Temperature:
Before seasoning, pat the steak dry with paper towels. Allow it to come to room temperature for about 30 minutes to promote even cooking.
A Salty Beginning
Salt. Always start with salt.
Generously season both sides of the steak with kosher salt. This not only enhances the natural flavors but also helps with moisture retention. Let the salt sit on the steak for at least 30 minutes before cooking.
Pepper and Beyond:
Add freshly ground black pepper. After that you can experiment with other spices like garlic powder, onion powder, or smoked paprika. Create a rub that sounds good to you. My favorite and the easiest thing I use is Tony’s.
Fresh Herbs and Aromatics:
Chopped herbs like rosemary, thyme, or minced garlic can take your seasoning to the next level. Press the herbs onto the steak or mix them into your spice rub for an aromatic experience. I LOVE herbs de Provence and I use it on Prime Rib as well, it’s all there for you in a ready made spice mix. Perfection. I will say it does better when the steak will be seared and get a good char on the outside, so be forewarned about that.
Preparing It To Cook
Olive Oil, Tallow or Butter Bath:
Before cooking, drizzle olive oil or place a pat of butter on top of the seasoned steak. This not only adds richness but also aids in the caramelization process during cooking.
Let it Marinate:
Allow the seasoned steak to marinate for at least 30 minutes or, ideally, refrigerate overnight for the flavors to penetrate the meat deeply.
Cooking Techniques:
Choose your preferred cooking method – whether it’s grilling, pan-searing, sous vide then searing, or broiling – and cook the steak to your desired level of doneness. We recommend Medium Rare. Remember to let it rest for a few minutes before slicing.
