Jump to RecipeIn my house we LOVE Pimento Cheese. It is one of my favorite appetizers. This weekend we are hanging out in the house for one because it is really cold. So much for Spring. Two, it is Masters weekend and there’s really nowhere else we’d be (we love golf on this farm). Three, I feel miserable with sinus/allergy stuff. Again, so much for Spring. Although, yay for the azaleas at the Masters. It came long enough to mess with my senses.
Anyway, back to the pimento cheese. It’s so southern and so delicious. Even better it is so easy to make.

You must, must, must use block cheese and shred it yourself. Okay well if you absolutely need to use pre-shredded cheese I won’t judge you (I love simplicity), but I just think it makes it taste so much better to shred it yourself. I also really like to add a little spicy kick to this with the addition of pickled jalapeno juice. You can adjust the jalapeno juice for taste.
This is one of those dishes that the amount of salad dressing used is also up to you. I personally don’t like it too wet, but I want to be able to easily spread it. I usually add a little at a time and eyeball it. That plus a few spices make up the entire ingredient list for this easy pimento cheese spread.
This is great served with crackers, any kind will work, but I like saltines and ritz crackers with it the best. If you’re watching the Masters (which you should, azaleas are in bloom for the first time in four years because of the colder winter temps this year) or the Derby you’ll want these on white bread as a sandwich.
I usually like to have my husband fry up some sliced green tomatoes and slather this salty concoction on top. I honestly never would have thought of this, but while on vacation in Savannah, GA this is how it was served to us and we absolutely fell in love. A year later I was sitting in a restaurant in Louisiana and on the menu is a bacon cheeseburger with fried green tomato and pimento cheese spread. Talk about good!

Pimento Cheese
Ingredients
- 1 4 oz jar pimentos
- 1 8 oz block sharp cheddar cheese
- 1 8 oz block pepper jack cheese
- 1 cup salad dressing Miracle Whip
- 2 T chopped pickled jalapeños and the juice from it
- 1/4 t paprika
- Salt
- Pepper
Instructions
- Shred the cheese.
- Add salad dressing, may need to add a little more depending on how easily it spreads or how creamy you like it.
- Add remaining ingredients and stir until combined.
- Cover and let sit in refrigerator for at least an hour.I taste and add more jalapeño juice as needed if I want it spicier. i to let it sit overnight for best results.
I think that you forgot the pimento in this recipe.
