This meatloaf is so easy to make and only uses a handful of ingredients.
When I had my first baby I was all consumed with him. So much so, I forgot to eat, drink, pretty much all self-care went out the window. I was in straight survival mode. Can anyone else relate?
Well, I probably would have not eaten at all and then I would have been no good for anybody. If it weren’t for my mother-in-law. I needed so much help. My sister-in-law was the ultimate encourager, my mama would come to rock my baby at night so I could sleep for three hours and my mother-in-law would come to my house and make my food and hold the baby while I ate it.
Really, I should say devour it. Like a starving dog. Like, don’t come near my food and nobody talk to me while I shovel this in my face … devour it.
I never really was a lover of meatloaf. It was just okay. I would eat it, but I would never request it.
Until I had a baby.
My mother-in-law made several meals for me those first two weeks, but none stands out as much as the meatloaf.

I tell my mother-in-law this all the time, and she says, “It’s nothing special.” She doesn’t even know how much that meal meant to me and how much it helped not only my physical health, but my mental health at that very stressful and sleep-deprived time of my life.
Enough sappy. Let’s talk about the recipe.
It is an easy meatloaf recipe and pretty hard to mess up. That is what she meant by it is nothing special, but it is so flavorful and yummy.
If I am making this for my little boys I puree the onions and peppers because they won’t eat it otherwise (yes, I know it’s ridiculous.)
Meatloaf
Equipment
- 1 loaf pan the one with the drip pan is amazing for meatloaf
Ingredients
- 1 lb ground beef
- 1 small onion finely chopped
- 1 small bell pepper seeded and finely chopped
- 1 15 oz tomato sauce
- 1/4 cup crushed cracker crumbs we like the buttery kind (club crackers)
- 1 large egg
- 1/2 tsp salt and pepper more to taste as needed
Instructions
- Preheat oven to 350
- Combine all the ingredients except for half of the tomato sauce
- Form into a loaf and place in a loaf pan
- Cook at 350 for 35-40 mins covered
- Drain the loaf pan and top with the remaining tomato sauce
- Cook an additional 10 minutes uncovered
- Remove from oven and slice and serve hot
