This is the easiest way to hard-boiled eggs fresh from the hens and still be able to peel them.

I don’t know about you, but peeling hard-boiled eggs with ease was a skill that had evaded me for many, many years. If you have ever had farm-fresh hard-boiled eggs you probably also know that task is infinitely more difficult to do.

Mrs. Terry and I decided to experiment one Thanksgiving and tried several different methods on store-bought eggs because we just love Deviled Eggs and Egg Salad at holidays. We tried putting them in cold then boiling, we tried baking soda in the water, vinegar in the water, shaking the eggs in a pot, in a glass with a little water in it and a few others. No luck. The eggs would be cooked perfectly, but so hard to peel. We finally found a way that worked like magic. Let the water come to a boil, add the eggs, boil 12 minutes and then ice bath. Peeling those babies was a cinch.

Once we had perfected this technique we thought we were good to go when our hens started laying. Not so. The eggs were nearly impossible to peel. They were not presentable by the time we were finished. It was a disaster. Of course, we went to Pinterest for inspiration. We found a few ways that seemed plausible and tried them out. Cooking them in an electric pressure cooker and then immediate ice bath is what we have found to be the BEST way to peel hard-boiled eggs.

  1. Right!! After using the electric pressure cooker for certain items, I’ll never use the “old way” of doing things.

Including hard boiled eggs, mash potatoes, brussel sprouts, and spaghetti.
