Summertime never tasted so sweet. These summer favorite berries make the best cobbler.
Jump to RecipeBlackberry Cobbler is an all-time favorite dessert in the summertime. Blackberries grow wild in several places here on our farm and we LOVE to pick them. On fences. Not in patches or fields because, OUCH. They are much easier to pick on a fence. We still pick them in the field though.
This cobbler is so easy to make and it is entirely from scratch and not a cake mix like some other cobblers.
It uses a simple list of ingredients:
Fruit Filling
2 cups sugar
3-4 cups fresh blackberries
2 Tbs arrowroot powder (clear gel or cornstarch could work too) to thicken
1/4 cup water
Make a slurry with the water and thickener before adding to the the fruit.
Cobbler
1 stick butter melted
1 cup of sugar (or brown sugar)
1 cup of whole milk
1 cup of self-rising flour
Mix the flour and sugar, milk and melted butter together before adding to the fruit.
We pick them and make this the same day. That is how easy it is.
You will need about 3-4 cups of fruit (I make things work even if I don’t end up with enough – measurements aren’t always exact for me) for this recipe, but you can change it up to just about any fruit and follow the same instructions. This is exactly what I do for peach, blueberry, strawberry, apple, and mixed berry cobbler.
Jump to RecipeBefore mixing in the arrowroot powder (at the end) or you can use cornstarch, I make a slurry in water. Meaning, I stir it into cold water in a cup and continue to stir until it looks like runny school glue.
Once you have it close to jelly consistency add the milk, melted butter, sugar and self-rising flour to the top of it. Make sure you take the one tiny step of mixing the flour, milk, butter and sugar together first.
Seriously, it’s that EASY! Don’t even stir.
Bake at 350 for about 45-55 mins until the crust is nice and brown and the center is not jiggly. You can use a fork in the crust and it should come out clean.
Serving suggestion: Warm with homemade vanilla ice cream (<<<not a paid endorsement, but seriously the BEST vanilla ice cream I’ve ever had), or any vanilla ice cream.
